Skye Seafood at Greshornish House

Fish and shellfish from Skye’s west coast appear regularly on the dinner menu at Greshornish House, shaped by weather, tides, and what local boats land each day. Seafood is served alongside Scottish meat, game, and vegetarian dishes as part of the standard evening menu.

Dinner service runs from March through October. During this period, seafood appears regularly as both starters and main courses, with dishes often changing daily according to what has been landed locally within the previous twenty-four hours. There is no seafood-only or tasting menu.

Lobster from Loch Greshornish

Lobster is caught in creels set in Loch Greshornish in front of the hotel. Creels are lifted when weather and tidal conditions permit, most commonly between May and September. When available, lobster is often landed the same day it appears on the dinner menu.

Lobster preparation is deliberate and unfussy: grilled with herb butter, steamed with lemon butter, or used in lobster and crab bisque. The point is to taste lobster, not technique. When weather is more settled in summer, it appears regularly—though never guaranteed for any specific date.

Sourcing Local Seafood

Scallops are hand-dived by local divers working the waters around the Isle of Skye. Availability can vary depending on sea conditions.

Line-caught fish is sourced from west coast day boats when possible. Species depend on daily landings and may include haddock, seabass, or mackerel. The kitchen works with what arrives rather than ordering to a fixed menu.

Langoustines, crabs, and mussels are supplied by local fishermen operating in nearby waters. Availability is typically confirmed close to service time, often on the same day.

Cooking methods are chosen to suit the product and allow its character to remain. Skye’s seafood is spectacular. The kitchen’s job is to interfere with it as little as possible.

What Fresh Actually Means

The key ingredient is immediacy. Scallops hand-dived yesterday taste sweeter and cleaner than anything frozen or shipped. Lobster caught in the morning from the loch visible from the hotel windows arrives on the plate that evening. The cooking stays simple because the product doesn’t need help.

This approach means the menu adapts daily. What was served Tuesday might not appear again until the following week. For guests used to predictable restaurant menus, this can feel uncertain. For those comfortable with it, it means eating seafood at its best rather than at its most convenient.

Restaurant Seasonality

The restaurant at Greshornish House operates from March to October. From 1 November to 28 February, evening dinner service is not offered at the hotel. During this period, guests may dine at the Edinbane Inn, approximately ten minutes away.
